Rum Cake & Glaze

A new feature is the Recipe of the Month. Each month we will include a recipe that has been submitted by one of our volunteers. If you have a favorite recipe that you would like to share with usplease feel free to send it to Danielle.This month’s recipe was submitted by Mary Shefton who is a driver on Monday and helps in the kitchen on Tuesdays.

Rum Cake

  • 1 package Yellow Cake Mix
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil

Rum Glaze

  • 1 3 3/4 oz package vanilla pudding mix
  • 1 tsp pure vanilla extract
  • 1/2 cup dark rum ((Bacardi works best))
  • 4 cups chopped walnuts
  1. Preheat oven to 325

  2. Grease and flower 10" bundt pan

  3. Spread chopped walnuts evenly over the bottom of the pan

  4. Mix cake mix, pudding, eggs, water, rum, vanilla extract, and vegetable oil until smooth

  5. Pour into prepared pan

  6. Bake for 1 hour at 325 degrees

  7. Cool in pan for 25 mins.

  8. Invert onto a serving plate and prick top of cake with a spoon
